I love a good butternut squash soup as much as anyone but I keep forgetting to incorporate it into the meal plan.
This is what I've been doing with them for the past 2 or 3 days.
Roasted Butternut Squash Bites
Serves 1
2 PointsPlus per serving
Preheat oven to 450 degrees.
Line a cookie sheet with foil (for easy cleanup).
Spray foil with a bit of non stick spray.
Peel a small butternut squash, cut it in half, scoops out the seeds.
Cube the whole thing up. I like 1/2 inch cubes.
Put the cubes in a bowl. Drizzle with 2 teaspoons olive oil. Sprinkle with flavorings of your choice.
I like things spicy so I use Cajun blackened seasoning or chili lime rub.
Spread the cubes on the prepared cookie sheet, in a single layer.
Bake for about 10 minutes.
Stir.
Bake 10 more minutes or until the squash is tender and browned in places.
Eat up!
Sure you could just roast the squash halves. And skip the olive oil.
But this creates hundreds of tasty little surfaces for maximum flavor. YUM!
This would be a good side dish as well.
But then you'd have to share.
