Made 12 Ginger Pear muffins...
...and tasted one.
Made 8 pieces of Soft Wrap Bread to go with the falafel I'm making for dinner tonight. Recipe to follow if the meal turns out well.

This is an awesome recipe! There is some prep time involved but very little of that is hands on. And it uses potato flakes which I happen to have a bunch of due to a questionable food storage program that my ex-husband and I signed up for many, many moons ago.
I think if you rolled them even thinner before cooking them, they would be a great sub for tortillas. And so easy!
And after dinner tonight I am going to a play with Kayleigh and her friend.
Totally looking forward to it!

I'd love to have the muffin recipe if you have the chance! We always end of with lots of pears somehow!
