Recent Recipe Trials

The night that Heather, Frank and Tukker came for dinner I made a pretty tasty dessert.
I grilled fruit!
Cut peaches and plums in half and lay face up on a platter.
Put strawberries on a skewer. Lay on platter.
Lay slices of pineapple on platter.
Brush a little honey over all. Sprinkle lightly with cinnamon.
Grill! Just long enough to get some nice grill marks and carmelization.
Serve with vanilla ice cream drizzled with caramel sauce.
It was DELICIOUS!

They were alright but not something any of us will ever crave.
I was beginning to think I had "outgrown" Rachael Ray. Yikes!
But I decided to try this one last night and in the words of RR herself, YUM-O!!



They'd be even better with some peaches from the farmer's market. You know, the ones where the juice runs down your arm while you're eating them. Mmmmmm..........

Georgia Peach Chicken Sandwiches

1 pound chicken breast cutlets (I just filleted two larger breasts to get 4 thinner pieces)

1 cup buttermilk

1/2 cup mayonnaise

3 Tablespoons pickled jalapeno peppers, finely chopped

1/2 cup pecans, finely ground

1/2 cup bread crumbs

1/2 cup EVOO

4 kaiser rolls, split

1 peach, thinly sliced

8 green leaf lettuce leaves

1. In a medium bowl, combine the chicken and buttermilk. In a small bowl, stir together the mayonnaise and pickled jalapeƱos.

2. In a shallow bowl, combine the pecans and bread crumbs. Working with one piece at a time, remove the chicken cutlets from the buttermilk, letting the excess drip off, and coat with the pecan mixture.

3. In a large skillet, heat the olive oil over medium heat. Add the cutlets and cook, turning once, until golden-brown, about 2 minutes on each side. Drain on paper towels.

4. Spread the jalapeƱo mayonnaise on the cut sides of each kaiser roll. Assemble sandwiches with the chicken, peach and lettuce.

I served these with chips and homemade potato salad. A carb FEAST!

I actually heard about this dinner from Kenz on the ride home yesterday. She started talking about it and then said "I'm craving some right now! Mmmm!" and the Mmmm sounded more like a growl than a hum. Sounds like you found a winner! I'm glad you posted it!
