
YUM! So much cool refreshing mint and lime flavor!
The tragedy is this:
We relied heavily on the makers of Bacardi frozen drink mixers to provide the yummy flavors. All we had to do was stir in the rum and club soda.
To our horror, we discovered that NONE of the dozens of grocers in our area stock this delicious shortcut anymore. Having checked the Bacardi website, we see that it IS still made. It just isn't sold here anymore. :(
The triumph is this:
I finally found a recipe that tastes nearly identical to our old favorite! Hooray! There are so many bad recipes out there! You wouldn't believe how wrong it can go!
So this is how we do it now:
Take a tall glass and drop 12 large mint leaves in it. Add 1/2 a lime, sliced 3 or 4 times. Add 1/2 a shot glass of sugar. Now take the handle of a wooden spoon and mash all that together in the bottom of the glass. They sell a tool, called a muddler, for this. But I already had the spoon. ;) After you get it all mashed together and the sugar is pretty much dissolved, add 1 shot of rum. Stir a bit more to finish dissolving the sugar. Add 3 shot glasses of club soda. Stir gently, Strain into a glass of ice. Garnish with a slice of lime and a mint leaf. Enjoy!
Bonus: The Bacardi mixer was heavily laden with HFCS which is bad for you.
So this is practically a health drink! ;)
