We had two menu items leftover from nights we decided to just have leftovers last week.
I'm posting the menu only for meals to get to the end of the month to complete my grocery budget challenge.
Breakfasts
~Baked Blueberry Oatmeal (I found the link to this one on The Grocery Cart Challenge and we REALLY liked it! It's a keeper!)
~Eggs and Toast
~French Toast, fruit
~German Apple Pancakes (I recently learned to make these in a 9X13 pan to accomplish more servings at once.)
Dinners
~Moroccan Chicken with Pine Nut Couscous, carrots
~Chicken and Chile Casserole, Corn, Chips and Salsa
~Teriyaki Stir Fry (Somehow I have ended up with two opened bottles of Kikkoman teriyaki sauce and marinade which we rarely use. If you have any favorite recipes I'd love to hear them!) Rice
~Roast Prime Rib of Beef with Horseradish Crust (We scored 4 beautiful roasts marked down to $2.99/pound. We used a gift card that we were given to buy them. Nice gift, huh?! ;) ) Scalloped Potato Gratin, Roasted Red onions with Butter, Honey and Balsamic Vinegar. My friend, Misty, brought this episode of How To Boil Water, on the Food Network, to my attention. It looks and tastes ~FANCY~ but it's pretty simple to make. You should try it!
~New Year's Eve Feast of Everything Lo Mein and Shrimp, Chicken and Veggie Fondue with Asian Peanut Dipping sauce.
I'll grocery shop tomorrow and update the ticker. We should come in well under budget. Hooray!
